ORANGE ZAATAR MIX

Zaatar traditionally uses sumac powder to bring acidity and colour to the mix. Substituting this for orange zest powder (see left) tones down the acidity, replacing it with an astringency and brings more citrus notes, making it great for adding aromas to a dish without upsetting the acidity balance. This makes enough for four servings.

Makes: 2 tablespoons

15g (1/2oz/2 tbsp) sesame seeds

5g (1/8oz/2 1/2 tsp) cumin seeds

3g (1/2 tbsp) fennel seeds

5g (1/8oz) orange zest powder (see left)

Preheat the oven to (fan) 160°C/180°C/350°F/gas mark 4. Put the sesame seeds on a small baking tray (sheet) and toast in the oven for 5 minutes.

Mix the cumin and fennel seeds together, place on a small baking tray (sheet), and toast in the oven for 5 minutes. Leave to cool, then grind the cumin and fennel seeds to a coarse sand texture using a pestle and mortar.

Mix all the ingredients together. This will keep for 2 weeks in an airtight container.
